There\u2019s no need to clean them or cut the roots off, simply place them on the barbecue as shown above. Unlike meat and other vegetables which cook best over hot embers, cal\u00e7ots should be cooked while there are still flames. After about five minutes you will see bubbles of juice escaping through the \u00a0blackened outer leaves signalling \u00a0that the cal\u00e7ots are cooked. Lift the cal\u00e7ot above your head so it hangs down vertically, tip your head back and lower the cal\u00e7ot into your mouth. Be warned this is a pretty messy business!<\/p>\n<h3>How to make <a href=\"http:\/\/www.slowburningpassion.com\/how-to-make-catalonias-salsa-romesco\/\">romesco souce<\/a>?<\/h3>\n<div class=\"ERSIngredients\">\n<div class=\"ERSIngredientsHeader ERSHeading\">INGREDIENTS<\/div>\n<ul>\n<li class=\"ingredient\">1 Head of Garlic<\/li>\n<li class=\"ingredient\">3 Medium Tomatoes<\/li>\n<li class=\"ingredient\">\u00bc Cup, Plus 2 Tablespoons Extra Virgin Olive Oil<\/li>\n<li class=\"ingredient\">1 Red Bell Pepper<\/li>\n<li class=\"ingredient\">\u00bd Cup Toasted Slivered Almonds<\/li>\n<li class=\"ingredient\">\u00bc Cup Toasted Hazelnuts<\/li>\n<li class=\"ingredient\">1 Dried Ancho Chile, Stemmed, Seeded and Re-hydrated<\/li>\n<li class=\"ingredient\">1 Teaspoon Smoked Spanish Paprika<\/li>\n<li class=\"ingredient\">1 Tablespoon Sherry Vinegar<\/li>\n<li class=\"ingredient\">\u00bc Teaspoon Kosher Salt<\/li>\n<\/ul>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<div class=\"ERSInstructions\">\n<div class=\"ERSInstructionsHeader ERSHeading\">METHOD<\/div>\n<ol>\n<li class=\"instruction\">Preheat oven to 400\u00b0F (205\u00b0C).<\/li>\n<li class=\"instruction\">Cut the top off of the head of garlic to expose the individual cloves within. Coat with 1 tablespoon of olive oil. Also coat the tomatoes with another tablespoon of olive oil. Place tomatoes and garlic on a sheet pan and roast in the oven. When the tomatoes are soft and just starting to brown, remove them (about 30 minutes). Continue to cook the garlic until it\u2019s caramelize, about 10 minutes more.<\/li>\n<li class=\"instruction\">On a gas stove top, or with a torch, char the exterior of the red pepper until completely black and blistered. Place pepper into a paper bag and seal the top to steam it for at least 10 minutes. Remove the charred skin, stem, and seeds.<\/li>\n<li class=\"instruction\">Toast the nuts in a dry skillet.<\/li>\n<li class=\"instruction\">In a food processor, add the garlic, the ancho chili, the remaining olive oil, and the nuts.
